In fact, even if technology has given the complete automation of our whole production, our products are constantly supervised and controlled by roasters, store-keepers, tasters, men which contribute to the success of our job. |

Our firm, supporting some additional costs, needs - for the realisation of its best blends - coffees which are sieved expressly at the source and then selected by our importers. Lately our firm has decided to buy a very new laser photo-chromatic sorting unit that can eliminate the riper coffee beans at the beginning and the unripe ones at the end. Another refining of the product is manually done by roasters during the cooling phase: the coffee, then, is sucked up and deposited in the silos where it will rest for the needed period to loose the gaseous substances (carbon dioxide). |
| Before the marketing of the product we control, in our laboratories, that the blend doesnt show particular defects: in fact, some qualitative standards can be obtained only thanks to the constant control made by our tasters. Nowadays "La Cittadella caffé" sells its products prevalently in the Bar sector, for which it prepares special high quality blends, mostly constituted of Arabic coffees. Other customers are represented by little groceries and by the large-scale retail trade.
