In 1965 in Pontedera our coffee toasting was
found,
and a charming history lighted by passion and by continuos search of
perfection begins. Our firm takes its name from the ancient fortress of
the Pisa harbour, where even today we can see the ancient Medicis stores
(13th century, when Pisa was one of the four maritime republics).
For
centuries the harbour of Pisa has seen ships coming from every part of
the world, loaded with all the products that were cultivated in the New
World only. Today, conscious of this history, we have engaged ourselves
to get on these values and this tradition that founds its roots on
antiquity. Even if we can’t escape from technological development, we
are sure that without human care and diligence some qualitative
standards cannot be reached. In fact, even if technology has given the
complete automation of our whole production, our products are constantly
supervised and controlled by roasters, store-keepers, tasters, men which
contribute to the success of our job.
Our
firm, supporting some additional costs, needs - for the realisation of
its best blends - coffees which are sieved expressly at the source and
then selected by our importers. Lately our firm has decided to buy a
very new laser photo-chromatic sorting unit that can eliminate the riper
coffee beans at the beginning and the unripe ones at the end. Another
refining of the product is manually done by roasters during the cooling
phase: the coffee, then, is sucked up and deposited in the silos where
it will rest for the needed period to loose the gaseous substances
(carbon dioxide).
Before the marketing of the product we control, in our laboratories, that the blend doesn’t show particular defects: in fact, some qualitative standards can be obtained only thanks to the constant control made by our tasters.
Nowadays "La Cittadella caffé" sells its products prevalently in the Bar sector, for which it prepares special high quality blends, mostly constituted of Arabic coffees. Other customers are represented by little groceries and by the large-scale retail trade. "La Cittadella caffè" is a firm in continuous expansion, happy to give its customers a quality product with a series of accessories indispensable for the development and the support of the customers.
